Spring is here. It is time to get out in the fresh air and experience everything nature has to offer. At this time of the year and in the months to come nature provides us with an abundance of fresh produce. Take advantage of nature’s gifts and challenge yourself to try new fruits and vegetables this spring. Explore your local organic fresh markets. Meet the people who grow your food and ask them questions about their organic farming practices. Join a CSA (Community Supported Agriculture) which will provide you with a box of local, organic, fresh and sustainable produce each month. Have an organic foods potluck party where everyone brings an organic dish and exchanges recipes.

In this newsletter you will learn ways to sustain the earth and celebrate Earth Day on April 22nd. Learn the benefits of eating raw foods and a few easy ways to incorporate more raw foods into your daily diet. One of the keys to a lifetime of optimal health and energy is adopting healthy habits at a young age. Learn easy ways to get your kids eating well now. Learn yoga stretches you can do at your desk to rejuvenate the body and mind. Go one step further and download a program that will pop up on your computer to remind you to take a break and stop and stretch. If you or someone you know has a little one who bottle feeds find out where to get non-toxic baby bottles and cups. In April Kelly is participating in a variety of corporate health fairs. She is working with companies helping their employees become pro-active about their health. Kelly is also conducting inservices for healthcare professionals. She is talking about the benefits of holistic healthcare including the use of nutrition and holistic health with physical therapy and the use of movement therapies such as pilates, gyrotonic exercise and yoga to treat patients.

Earth Day is April 22. To celebrate you can make small changes that have big results.

Do your part to cut climate-changing emissions by driving less and walking or biking more. Check out www.terrapass.com to calculate the carbon your driving produces.

Save 150 to 500 pounds of CO2 a year (two loads per week) by washing your clothes on the warm or cold water cycle.

Save annually up to 300 pounds of carbon by installing low-flow showerheads.

Unplug stand-by powered appliances, which consume up to 25 percent of your home’s energy.

Buy organic products. More than 3,500 grocery stores have teamed up to offer discounts on organic products throughout April.

The Benefits of Eating Raw


Raw foods are foods in their natural form, from the earth, organic and uncooked. Raw foods contain enzymes which greatly aid in their own digestion, allowing the body’s own enzymes to do the work unimpeded of regulating all the body’s many metabolic processes. Heating food degrades or destroys these enzymes in food, causing the body’s own enzymes to do the work. Eating foods without enzymes makes digestion more difficult. The body is not only deprived of enzymes but it also has to work harder to digest the food and the food does not get properly digested. Over time this can cause toxicity in the body. It can also lead to excess consumption of food because you still crave the nutrients you are not getting from the foods you are eating and therefore, continue to eat to try and get those nutrients. Obesity and chronic disease can be the end result of not eating enough raw foods. Ideally our digestive tract is populated with beneficial flora that enhance digestion and the immune system. Raw foods contain bacteria and other micro-organisms that populate the digestive tract with this beneficial flora. Finally, most raw foods are more nutrient-dense than foods that have been cooked.

You don’t have to eat 100% raw. I suggest you strive to eat between 50-80% raw. If this sounds too challenging just increase the amount of raw fruits and vegetables you are eating. Think of raw food as living food. Living foods are everything edible that grows from the earth that is not cooked. Raw foods include vegetables, fruits, grains, beans, nuts, roots and seeds. When food is cooked above 120 degrees, its nourishing enzymes die and therefore most of the essential nutrients are dead. You also want to make sure that you are buying organic raw foods. Organic foods are grown in soil that is enhanced with organic aids such as compost, earthworms, natural rock products or beneficial bacteria. Organic farming does not use pesticides and toxins and therefore produces the purest, most nutritious foods. If you can’t buy all organic be sure to wash it well.

Eating raw foods is pleasurable because you taste food in its pure form. You experience a wide range of flavors and textures. Become aware of how your body and mind feel after eating raw food compared to cooked or processed foods. Eating raw foods also helps the planet. Instead of getting rid of packaging in the trash you will get rid of seeds that will break down.

Eat Well with Raw Foods


A great way to increase your intake of raw foods is to eat a raw salad loaded with a variety of nutrients everyday. The following are two of my favorites:

Power Salad

-one bunch kale
-one bunch spinach
-mixture of any greens you choose
-one red and one yellow bell pepper
-half avocado
-sprouts of your choice- alfalfa, brocco etc
-olive oil or flax seed oil
-sea salt
-cayenne pepper
-one lemon
-one inch piece of ginger
-one half red onion

Chop greens into bite size pieces and throw into a bowl. Pour ¾ cup olive oil or flax seed oil and the juice of one lemon on greens and mix with hands. Process in food processor bell peppers, red onion, ginger, ½ cup olive oil or flax seed oil, sea salt and cayenne pepper to taste. Process till it’s a liquid. Pour marinade over greens and mix with hands. Chop ½ an avocado into bite size pieces. Add sprouts and avocado and lightly toss. Eat immediately or even better let it sit for a few hours.

Sea Vegetables Slaw

1 handful of hijiki seaweed, soaked and drained
1 handful of chopped cilantro
1 handful of shopped scallions
4 cups of shredded cabbage
Add fresh herbs to taste.

Mix all above ingredients in a bowl and serve.

Nutrition for Kids


Use the following tools to help your children develop healthy eating habits:

Be a good role model and practice what you preach. Unhealthy kids are often the result of unhealthy parents. Eating habits are learned behaviors so what they learn to eat at home at a young age will stick with them into adulthood.

Educate and talk to your kids early about healthy habits. Inform your kids that if they eat healthy foods they will grow up to be strong and healthy. Educate them about the benefits of living an active lifestyle as opposed to sitting in front of the TV.

Take the kids grocery shopping. Introduce them to the variety of whole foods. Allow kids to make choices about what they want to buy and eat. Encourage them to explore new foods.

Take a trip to the local farmer’s market. Introduce them to the farmers. Explain to them where the food comes from and what’s the difference between organic and non-organic.

Be flexible. Don’t be too strict with food. Allow your child to have most things in moderation. Allow them to have a special treat each day or once a week. This will help them to build a good relationship with food.

Make mealtime a special family time. Create a warm atmosphere. Plate each dish so it looks good. Pay attention to all five senses when sitting down to a meal.

Get the whole family involved in meal production. Give each child a special task at meal time. Allow your kids to plan weekly meals. let kids help in the kitchen. Kids like eating foods they create. Allow kids to get creative when preparing their school lunch.

Don’t serve “kid food” and “adult food”. Research shows that it takes 10-12 attempts before a child will try a new food. Make the same dinner for everyone being sure to include food they like.

Cook with your kids or get your kids involved in a kid’s cooking class. Teach kids about food and cooking in an active way. This will increase their sense of culinary adventure.

Teach your kids about the negative marketing of foods to kids. Avoid the highly marketed processed foods targeting at kids.

Avoid processed foods. Work hard to avoid food colorings, benzoate preservatives and artificial sweeteners. Food dyes and additives are a factor in attention and behavior disorders and can increase incidence of ADHD.

Don’t use food as rewards, bribes or punishments. This will foster a negative relationship between you and your child and food.

Love and accept your child at any weight, size or shape. Help your child create a healthy relationship with food. Dieting during a growth spurt can have dangerous results.

Make sure your child eats breakfast. It is the most important meal of the day. It will increase their energy, alertness and attention.

Remember that as the parent, you are the boss. Adults need to set boundaries and limits. Listen to your children but set limits.

Benefits of Eating Breakfast


Breakfast is the most important meal of the day. Breakfast refuels the body after a night’s sleep. When sleeping, the body needs fuel to allow the function of the body to continue working. Most of that fuel comes from stores of glucose in the blood, liver and muscles. By morning, the body is essentially in fasting mode. Breakfast is literally,”breaking the fast”.

If you don’t eat breakfast the result is low blood sugar, decreased energy, fatigue, poor concentration, irritability and lack of attention. If you are an athlete or participating in intense or long-duration exercise, your muscles need the fast-burning energy that comes from carbohydrates. Without it, your performance will be less than optimal because of low blood sugars and depleted energy stores.

Eating breakfast will help you to get in all the servings of nutrient-dense foods you need in a day.

Yoga at your Desk


Most people sit at a desk eight or more hours per day. To keep the body and mind balanced take a break and move the body once an hour. Research shows that taking regular hourly breaks thoughout the day can help prevent repetitive stress injuries. The following are some stretches you can do at your desk:

1.Low-back Release: Stand behind your chair and place the backrest of your chair at waist level. Fold the spine over the backrest of the chair. Rest your forearms on the seat of your chair and just hang there for multiple deep breaths.

2.Mid-back twist: Sitting on the side of your chair with upright posture, twist your spine allowing your spine to grow taller as you twist. To increase the intensity hold on to the backrest of the chair and increase your rotation with each exhale.

3.Basic Neck Stretch: Sitting in your chair use your arms to assist in stretching your neck in flexion (looking down), sidebending (ear to your shoulder) and rotation.

4.Hamstring and torso stretch: Stand behind your chair with your hands placed on the top of the backrest. Step as far away from the chair that you can hinging from your hips. open your chest and reach your buttocks back behind you. Hold and go deeper into the stretch with each exhale.

5.Chest Opener: Holding a yoga strap or theraband reach your arms out in front of you with your hands a little wider than shoulder distance apart. Reach your arms up and over your head and then behind you without bending your elbows. When you get to the point that you feel an intense stretch in your pec muscles (chest), hold that stretch and breathe into it. Do not let your spine arch when performing this exercise.
